Document options for additional helm chart configuration

There is a fine line between making the helm chart easy and simple to
use and supporting lots of configurability. This documents options for
users who would like to extend the Helm chart beyond what is readily
available in the `values.yaml` file.

## Customizing the Helm Chart
Given the wide variety of use cases, it won't be possible to support every
configuration option in the Helm chart's `values.yaml` file without making
it difficult to understand and use. For additional
flexibility in changing values that aren't listed above, consider using
third-party tools such as [kustomize](https://github.com/kubernetes-sigs/kustomize)
and [ship](https://github.com/replicatedhq/ship).
